To the naked eye, a slider is just a little soft white roll that looks a lot like a mini hamburger bun. If you’ve never eaten one before, you can’t anticipate the pillow-like texture and slightly sweet edge that these little beauties have. I first encountered sliders when I was living in the States 20+ years ago, and I was always keen to do a fish slider when I was first planning on opening Depot in Auckland back in 2011. No one was making the right-sized bun at the time, so Sean Armstrong from Loaf Handcrafted Breads and I worked on creating the perfect slider recipe. The fish sliders became one of the most popular dishes on the Depot menu, and Loaf now sell them commercially in supermarkets all over New Zealand.
Sliders are super versatile; great for handing round when you have mates over, a simple week night dinner, or popping in the kids’ lunchboxes. Sliders are often one of my go-tos when I want to whip up something quick and delicious in short amount of time. If I’m feeling especially lazy I grab some of the meatballs I make with More Foods and go from there.
Here are 10 of my favourite slider flavor combos. Use these suggestions as a starting point, but don't be afraid to freestyle them just like when you’re making hamburgers. Just remember to slice and butter your slider buns before toasting them in a dry pan to get the best crispy finish and to warm and soften the bread.
